This is an intensely fresh, fruity and ‘drink now on any occasion’ style of wine. The colour is light and the wine generally exudes layers of attractive strawberry and confectionery aromas and flavours. There is an edge of sweetness on the palate, but it is well balanced with a refreshing acidity and has a lingering and satisfying finish. Enjoy!
Vivo Pinkis a wine ideal with food especially with Nachos; pizza; anti pasto & tapas .
Both varieties of grapes were machine harvested in the cool of late January 2009. At the winery, they were crushed, de-stemmed and chilled and the juice was allowed to soak on the grape skins for only about ½ an hour to extract only light colour. After soaking, the juice was pressed off the skins, before being clarified and then fermenting cool in a stainless steel tank. Maturation on the yeast sediment after fermentation was limited to maximize fruit freshness, then the wine was stabilized, filtered and bottled within 3 months.
